Wilbanks shares some of her favorite holiday recipes

“Thanksgiving is all traditional food, but not Christmas,” said Susan Wilbanks about holiday meals.
“I do more candy making and baking at Christmas. We do more appetizers and soups or chili for my family gathering,” she said.
She makes the cheese ring every year, and doesn’t make meatballs as much as she has in the past, and, “I love peanut butter balls,” she said.

Cheese Ring
2 lbs. sharp cheddar cheese, grated
1 small onion, finely chopped
1/2 cup chopped pecans
1 cup mayonnaise
1 jar strawberry preserves
Put chopped pecans in bottom of the mold, if using a mold. If not, just mix pecans with other ingredients. Mix all together and put in round mold or mold in the shape of a ring. To serve, put strawberry preserves in the middle of the ring and serve with wheat thins.

Peanut Butter Balls
1 1/2 cups crunchy peanut butter
1/4 block paraffin
2 cups (4 sticks) margarine
12 oz. pkg. semi-sweet chocolate
2 1/2 boxes powdered sugar
Melt peanut butter and margarine together over low heat. Remove from heat. Gradually add powdered sugar. Roll into balls. Melt chocolate and paraffin over low heat. Dip balls into chocolate with toothpick and place on wax paper. Note; Can use chocolate bark instead of chocolate and paraffin.

Tangy Party Meatballs
1cup Corn Flakes
2 lbs. hamburger meat
2 Tbsp. onion flakes
2 Tbsp. soy sauce
1/4 tsp. black pepper
2 eggs
1/2 cup ketchup
1/2 tsp. garlic powder
Mix all together. Gently roll into 1 1/2” balls.
Sauce:
12 oz. chili sauce
16 oz. cranberry sauce
2 Tbsp. sugar
2 Tbsp. lemon juice
Place meatballs with sauce in baking dish and bake 35-40 minutes at 400°.
