“I found this Macaroni Philly Beef Steak recipe online one day when I was looking for something new to try,” said Brenda Busby of Pittsboro.
“I thought it would be easy and taste good, and boy, it is all of the above!”
Her husband Mark liked it and she says everyone who has tried it has liked it, and “the best part is it’s so good, there is none left over!”
Brenda says she is all about easy recipes and usually doesn’t ever try recipes if they have more than five or six ingredients. She also calls her bread recipe super easy.

Since there’s just the two of them at home, she says she doesn’t cook as much.
“We pretty much like basic country foods, like peas, butterbeans, cornbread, mashed potatoes and pork chops. We love during spring and summer to fish and we always have fried fish with all the trimmings and that’s when I like to make my own tartar sauce.”

Macaroni Philly Beef Steak
8 oz. . macaroni noodles
1 lb. lean ground beef
2 cups onions, sliced thin
2 medium bell peppers, cut in thin strips
1 Tbsp. Montreal steak seasoning
8 oz. cream cheese, softened
½ cup beef broth
2 cups shredded cheddar cheese
Cook macaroni al dente and drain. In large skillet, brown meat, onions, peppers and steak seasoning. Do not drain (this is why you need lean ground beef.) Remove from heat, add cream cheese, stir until well blended. Add beef broth and macaroni noodles. Stir together. Pour into a 9×13 dish. Sprinkle grated cheese on top. Cover with foil. Cook on 350° from 20-25 minutes until cheese is melted and bubbly. 8 servings.

Homemade Tartar Sauce
Blue Plate mayonnaise
Onions cut up, very finely
Lemon juice
I start out with about 1/2 cup mayonnaise, about half of a medium onion and then a Tbsp. of lemon juice. Mix until blended. Taste, and then adjust according to how you like for it to taste.

Homemade Bread
1 cup warm water
2 Tbsp. sugar
1 – .25 oz. yeast
1/4 cup oil
3 cups bread flour
1 tsp. salt
Place water, sugar and yeast in bread maker. Let yeast dissolve and foam, about 10 minutes. Add oil, flour and salt. Press start.
