Salter shares two of her favorite recipes

Kate Salter Gregory of Starkville “declared” on Instagram that she would be “Cooking my way through 2021!”
In preparation to returning to work from maternity leave, she told about making Wheat Raisin Bran Muffins, which she freezes for her breakfast.
The recipe was one that her mother, the late Paula Jones Salter, made.
“The recipe makes three 1/2-4 dozen (for me) in a regular 12 ct. muffin tin, and bake 22 minutes in my oven.”
Kate also likes Pioneer Woman Ree Drummond’s recipe for Oatmeal Crispies.
“They are so good!! Always looking for creative ways to gets oats in my system!” said Kate.

Wheat Raisin Bran Muffins
(Kate Salter Gregory & Paula Salter)
1-15 oz. box Raisin Bran
5 tsp. baking soda
3 cups granulated sugar
1 tsp. salt
5 cups wheat flour
4 eggs
1 qt. buttermilk
1 cup Crisco
In large bowl, mix cereal, sugar, flour, soda and salt. Beat eggs well. Add eggs, oil and milk to dry ingredients. Fill greased muffin tins 2/3 full. Bake at 375° for 20 minutes. Makes 3 1/2-4 dozen.

Oatmeal Crispies
(Ree Drummond)
1 c. shortening (Crisco)
1 c. packed brown sugar
1 c. sugar
2 whole eggs
1 tsp. vanilla
1 1/2 c. all-purpose flour
1 tsp. salt
1 tsp. baking soda
3 c. quick oats
1/2 c. finely chopped pecans
In a large mixing bowl, cream shortening with both sugars until well combined. In separate bowl, beat eggs together. Add vanilla and stir to combine. Add to the shortening/sugar mixture and mix well. In separate bowl combine flour, salt and baking soda. Mix carefully into egg/shortening mixture until well combined. Now add the quick oats and mix well again. Finally add the finely chopped pecans and mix well to combine. Divide dough in half and place each half of dough onto sheet of waxed paper. Roll dough into a log and wrap tightly in waxed paper. Now you can either chill or freeze dough until later or go ahead and slice dough evenly into cookie rounds. When ready to bake them place on cookie sheet and bake at 350° for 10 minutes until are golden brown.
