“Sad Cake” recipe shared from Pleasant Ridge archives

This Sad Cake recipe was included in Mrs. Doyle Winter’s ‘News From Pleasant Ridge’ on February 7, 1991.
“This cake will rise and fall; that is where it gets its name,” she said.
In checking out other “sad cake” recipes online, it is described as sweet, moist and chewy, and coconut and raisins were listed as optional ingredients.
“It rises while baking, then falls,” was a description given in one recipe.

Sad Cake
Mrs. Doyle Winter
2 cups biscuit mix (Bisquick)
4 eggs
1 tsp. vanilla
1 lb. box light or dark brown sugar
1/2 cup oil
Optional: 1 cup pecans or 1 cup chocolate chips

Mix ingredients and pour on a greased cookie sheet, 12x15x1. Bake at 300° for 30 minutes. Cool in pan and cut into squares.
