Dauzat shares two fall recipes

Amber Dauzat shared two Fall recipes that were taught to her by her mother, Debra Dauzat, while she was growing up.
Her entree is Rice Dressing (Dirty Rice) which she says isa great dish to bring for family dinners quick easy dessert, parties or just a meal itself.
She calls the Chocolate Crack Pie a “quick easy dessert”.

Rice Dressing (Dirty Rice)
4 Tbsp. cooking oil
½ lb. pork sausage w/sage
½ lb. chicken gizzards
½ lb. ground turkey meat
½ lb. chicken livers
Salt and pepper to taste
2 pods garlic, finely chopped
Cajun seasoning (optional)
Chopped green onions
Chicken broth
2 or 3 sticks of celery, thinly sliced
3-4 cups of rice
1 bell pepper, chopped
Bread crumbs (plain or seasoned)
Boil chicken livers and gizzards (until soft). Remove from heat, drain and let cool. Chop them up and set aside for later. Brown sausage and ground turkey, drain all fat from meat, add back to skillet. Add all veggies in skillet with meat and oil. Sauté and simmer until all veggies are tender. You can add salt/pepper and Cajun seasoning during this process. Once cooked, remove from heat and let cook. In large baking aluminum pan, add in cooked rice, meat and veggies. Mix all ingredients together, but do not stir too much when mixing because it can cause rice to get mushy. After everything is mixed well, pour in chicken broth evenly over mixture so it barely covers the top, to keep dressing from drying out and burning. Once that is all done, add a top layer of bread crumbs. This gives the dressing a nice topping. You can layer the bread crumbs with sliced butter to keep it moist on top. Bake until chicken broth is almost evaporated. About 45 minutes at 350°. Check every 15 minutes. Remove from oven, let sit a few minutes and serve.

Chocolate Crack Pie
1 (4 oz.) bar semi-sweet baking chocolate
1 stick butter
1 cup sugar
2 large eggs
1 pie crust (Not Deep Dish)
Melt butter and chocolate together in small saucepan over very low heat, stirring frequently. Remove from heat and immediately add sugar. Stir until well combined. Allow to stand about 3 minutes to cool slightly. Place eggs in a mixing bowl, beat lightly with a whisk or fork. Add chocolate mixture and whisk until well combined. Pour into crust. Bake at 350° on bottom oven rack 30 minutes. Move to top rack and bake 10 minutes more. Remove from oven and cool to room temperature. Serve with whipped cream or ice cream if desired.
