A few more pumpkin recipes for the fall palate

Rounding out the recipes for all of the October pumpkins are Shirley Curtis’s Pumpkin Bread, and Pumpkin Bars, found in a past Home Extension Economist column.
Although there are many variations, Deanna Denley Clements’ Roasted Pumpkin Seeds recipe is one included in our family cookbook.
So, save the seeds after carving your Jack-O-Lantern or making pumpkin pie, and use them to make this final pumpkin recipe.

Pumpkin Bread

1 cup oil
2 cups cooked, mashed pumpkin
4 eggs
2 cups plain flour
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/2 cup sugar
Mix all ingredients together in blender and pour into greased bread pan. Bake at 350° for 30 minutes. Cool before serving.
To make the frosting, mix all ingredients on high until soft and whipped. Spread onto completely cooled muffins, or place into a large pastry bag with a large star tip and go crazy! Store in the fridge, as icing will soften at room temperature.

Pumpkin Bars

1-3 1/2 oz. can flaked coconut
1 cup graham cracker crumbs
1 cup chopped walnuts
1/4 cup butter or margarine, melted
2 cups cooked, mashed pumpkin
1-14 oz. can sweetened condensed milk
2 eggs
2 tsp. pumpkin pie spice
1/2 tsp. salt
Combine coconut, graham cracker crumbs, walnuts and butter. Mix well. Pat 2/3 of mixture into ungreased 13x9x2” baking pan. Combine remaining ingredients, stirring well. Spoon evenly over coconut mixture in pan. Sprinkle with remaining coconut mixture. Bake at 375° for 30-35 minutes or until knife inserted in the center comes out clean. Cool pan and then chill. Cut into 2×3” bars. Yield: about 2 dozen.

Roasted Pumpkin Seeds

After carving pumpkins, scoop out the seeds, wash, and lay flat on cookie sheets to dry. Preheat oven to 275° and combine:
1 1/2 Tbsp. margarine, melted
1/2 tsp. salt
1/8 tsp. garlic salt
2 tsp.Worcestershire sauce
(Note: these proportions are for 2 cups pumpkin seeds.)
Mix with pumpkin seeds and place in greased shallow baking dish. Bake for 1 hour, stirring occasionally.
